Summer is officially here, and I am beyond excited! I love the weather, going to ball games, food and music festivals, pool time and all the summer foods. When I think of summertime foods I think of scrumptious cookouts, fresh fruit, salads (of all varieties,) refreshing drinks and cooling popsicles. I’m a dessert girl, so I love using summertime as an excuse to eat as many popsicles as I can. I love almost all flavors of popsicles, but I think the simple berry blend in this recipe is the best. They’re a little sweet, a little tart and a lot refreshing. These popsicles combine berries and apple juice to make something that is light, fresh and slightly magical. I love to make them right before I go to bed so I can have them on hand anytime I need a cold treat during the next day 🙂
Makes 6 popsicles
Ingredients:
- 1 ¼ cup frozen berry mix (I just use a medley with raspberries, blueberries and blackberries)
- 1 ¼ cup apple juice
Directions:
Blend the berries and the apple juice together until you have a smooth mixture. If you don’t like seeds, I would HIGHLY suggest straining the mixture after it’s all blended up. Pour the mix evenly into your popsicle molds and freeze for at least 5 hours.
